Wheat research has shown that sufficient sulfur levels are needed for maximum test weights, protein and yield levels. It is also well known that flour made from low-sulfur-content wheat performs poorly in the bakery. Additionally, nitrogen from ammonium sulfate is more resistant to losses to the environment than urea, a fact that has been widely documented.
